hugin is a free software for stitching. you can find a lot of tutorials on this page.
i use realviz stitcher for stitching. it's very comfortable but not for free: [link]

That's great!

This tut up to the step "equirectangular projection" should also fit as a spherical world map for other scenes or as an environment map to fake reflections in a 3D-scene. Cycling through these steps with different gamma settings may result in nice HDRI lightprobes with some postwork in hdr-shop. But that sounds like much legwork :D

Maybe the walkthrough can be sped up with a shorter focal lenght and thus fewer shots.
